Here’s an inside view of a Brinkmann Smoker.
The Top rack is where I have the meat. In this case it’s a Boston Butt we are smoking for our recipe for pulled pork.
The Bottom is where I have the placed wood chunks in with the hot charcoal.
Just above the bottom rack is the lower middle rack where I put a stainless steel pan with water cut up apple, lemons, and diferent spices.
The middle rack just below the Boston Butt is a second meat rack. This comes in handy when you need to do a second, third or fourth Boston Butt to make your recipe for pulled pork for a larger party.
