Lapper Trays

Lappers, also known as Lapper Trays, were created to eliminate the biggest frustration with dining trays. Whether you are using plastic trays, wooden trays or metal trays the Lapper Tray will virtually eliminate your plates and glasses from sliding off your tray.

Imagine someone handing you a tray of food and as they hand it to you the dining tray tilts and the race begins. The plate takes an early lead to the floor but the glass is catching up quickly. Suddenly you shift the angle to compensate for the trays angle and the race starts to the other side. Which will hit the floor first the plate of food or the glass. Will our guest beat the balancing act and save the culinary delights you gave them. Or… will they end up on your carpet giving you a daily memory of that losing battle.

The Lapper Tray fixes that problem. The Lappers will:
1.) Keep your dishes in place
2.) Lapper Trays are dishwasher safe
3.) Store conveniently
4.) Lappers have handles that really work

The Lapper Trays are made of melamine, an extremely durable plastic. The key their non-slip feature is two fold. First they have indentations where the plate and glass go. Second they have a fitted anti slip silicone mat for both the plate and the glass. Therefore dishes and glasses stay in place when the Lappers are tilted or turned.

So go ahead, hand off that tray of food with confidence! These BBQ serving trays keep your barbecue safe. The Lappers are not only fun, they are also functional.

Smoked Chicken Pizza on the BBQ

1 Twelve-inch pizza dough
2 Boneless chicken breasts
1 tbsp Olive oil
2 tsp Minced garlic
1 tbsp Ground mustard
1 tbsp Chili powder
2 tsp Grated fresh ginger
3 c Ketchup
1 c Light brown sugar
2 oz Balsamic vinegar
1/2 c Worcestershire sauce
6 oz Mozzarella cheese
2 tbsp Sesame oil
1 sm Red onion; julienned
2 oz Molasses
1/4 c Chiffonade of basil

Season the chicken breast with olive oil and spices.

Place chicken on the grill and cook for 5 to 6 minutes on each side. Remove from the grill and julienne.

Combine the ketchup, brown sugar, Worcestershire sauce, sesame oil, molasses, chili powder, ground mustard, garlic, ginger, and balsamic vinegar in a food processor and puree until the sauce is smooth. Season with salt and pepper.

Spoon the sauce over the dough. Layer the cheese over the sauce. Sprinkle the chicken, red onion, and basil over the cheese.

When grilling a pizza you want good dough that will hold up to being transported and turned on the grill.

Rollout your dough about 1/4 inch thick and try to keep it pretty even. Pizza is a very forgiving dish so you don’t need to break out the calipers for this one. Just keep the dough uniform and well floured.

When it comes to the grill, keep it clean and well oiled. You need the pizza dough to slide on the cooking grate. If it sticks you’ll be out some dough. What you want to do is take the rolled dough rounds and lightly grill them. You can grill them on one side or both. If you just grill one side put your toppings on this side before you return it to the grill. Either way, with the bare dough rounds lightly browned, put your toppings on and turn down the heat on your grill.

If you are using charcoal you will what one side hotter than the other so you can put the topped pizzas on the cooler side. The goal here is to get the toppings heated and any cheese melted before the crust burns. As with all grills, keep a close eye on the pizzas.

With the lid down you can bake the toppings to get your pizza just right. If you are using heavy toppings, like meats or thick cut vegetables you might want to grill them up a little first before you cut them up and put them on the pizza.

While the grill is a great place to cook pizzas the intense heat can burn through crusts pretty quickly. You don’t want cold toppings on a burnt crust.

Omaha Steaks Review

We’ve given Omaha Steaks as family Christmas gifts for years, but never tried them ourselves.  I’m a bit of a hack on the grill, and I certainly didn’t want to turn a fine cut of meat like an Omaha Steaks filet into shoe leather – or burn up that kind of money.

Recently we got an Omaha Steaks gift card, so with little to loose, we finally tried their bacon-wrapped filets. They were fantastic!  However, they would have been even better had I trusted Omaha Steak’s cooking instructions.  In my infinite grilling wisdom, I added one minute of grilling time to each side, and they were just a little overdone for our taste.  Still, they were tender, tasty, and succulent.

So, next time I’ll follow the instructions precisely for a perfect steak. Omaha Steaks are still a little pricey for us, but now that I’m not afraid of ruining them, we’ll put them on our Christmas list as well.
